Once the squash has roasted the gnocchi comes together pretty easily and you can either boil it right then or you can cover it and put it in the freezer to save for a busy weeknight. I wanted the flavor of the butternut squash to stand out. So I tossed the gnocchi with a simple butter, sage sauce that fits nicely with the dish.

Preheat the oven to 400f and set the rack to the middle level. Cut the butternut squash in half and remove the seeds. Place the squash cut side down on a parchment paper lined baking sheet. Roast in the oven for 40-45 minutes or until fork tender. Pro tip: Roasting the squash face down will speed up the roasting time dramatically.
